Yes, you can substitute almond flour, and the proportion would be the same. What will likely change is the cook time and the texture. Keep in mind that besan is made from chickpeas, which gives it a really different texture and ability to withstand heat before burning. If you work with almond flour, just keep an eye on it to make sure it does not cook too fast. You may need to add a bit of sugar or butter towards the end to help it bind. But, keep in mind, we make pinnis out of all sorts of flours and other ingredients, so this should be no problem at all. You may just need to play with the recipe a bit. I hope that helps!
