A SNICKERS BAR EVERY DAY – ZERO GUILT!

This recipe has been my hack the last few years to help navigate my dessert cravings — and it truly works! Guilt-free dessert-ing is how Instagram sold it to me originally, and it looked so good I had to give it a try.

The reason why it works? First, the combo of sweet (dates), creamy nuttiness (peanut butter), crunch (nuts), salt, and a touch of dark chocolate. But that’s not all. The way to take it to the next level? Freeze it!

Freeze a tray and eat them right out of the ice box, and all of a sudden, you have this delicious and chewy, gooey snack that cuts all the cravings and is actually good for you. I haven’t looked back since — not that I really was a huge candy bar eater to begin with, but the last few years as I try to get to my fittest ever, I find that it helps to replace my indulgences with good-for-you options.

I’ve never been able to resist that chocolate-peanut butter combination, so having these handy truly helps. Yes, I have become my mom, who was the OG on this advice that I ignored until I had my own kids and wanted to simply eat better to feel better. Since I’ve gone back to my on-camera work, I’m especially using this healthier habit to trim down for that lens that seems to add ten pounds right in your chin! If I eat one of these, I can resist the most tempting cupcake or at least eat a little less of the other stuff. It’s just a fantastic option to have on hand. One of my daughters is equally obsessed, and for full disclosure, the other prefers her regular dessert. No biggie!

Dessert: Date Snickers Bars

Ingredients

  • Chocolate (I prefer dark), chips or whole (melted)
  • Dates, sliced down the middle and pitted
  • Peanut butter or another nut butter
  • Pecans, or another nut
  • Rock salt or pink Himalayan salt

I opted to leave out quantities since you can make as many or as few as you desire!

Instructions

  1. Lay a sheet of parchment paper on a baking tray that can fit in the freezer. If using a chocolate block, melt on the stovetop in a double burner or in the microwave. Keep it warm and melted as you prepare the dates. If you don’t want the hassle of melting chocolate, simply use mini chips and stick them into the peanut butter in the next step. 
  2. Slather peanut butter into each date with a butter knife. Up to you how much, but you don’t want it oozing out. Stuff a pecan half into the date and dip one end of the stuffed date into the melted chocolate, or sprinkle a few chocolate chips on top into the peanut butter so they stick. Once finished stuffing and dipping the dates, sprinkle them all with a pinch of salt.
  3. Place them in the freezer and let them completely freeze for at least six hours or ideally overnight. Remove and enjoy!

Notes

Because these can be hard coming right out of the freezer, I like to take a chef’s knife to them, slicing each one in half on a diagonal before eating. They are not only easier to chew, but look beautiful on the inside with the layers of date, peanut butter, and nuts. Another idea: Dust the chocolate side with ground pistachio before freezing.
